Anyone fond of their cuisine probably knows that the Japanese take fresh fish very seriously. In fact, the national Ministry of Agriculture has attempted to establish a “sushi police” of sorts that would validate the authenticity of certain food staples in restaurants worldwide. So where do the hungry masses get their fix? Well, in Tokyo, it’s the Tsukiji Market, the single largest wholesale fish market and kitchen for millions of Japanese. Thousands of tons of seafood from six continents move through the crowded lanes and passageways here daily, particularly shrimp, tuna, and salmon. Located just inside the harbor on the Sumida River a few blocks from the center of Earth’s most populous city, Tsukiji is linked by a series of canals to Tokyo Bay and the Pacific Ocean beyond.
